Pancake Day {Yum Yum}

Pancake Day is here and I’m so excited. It’s something my husband just doesn’t get worked up about but I do. As a kid it was a really big event in our household as it is the eve of Lent.  In fact pancakes were the only thing we would have for dinner on Shrove Tuesday so my Mum would make millions of them – I’d always wanted to see how many I could polish off. I’ve tried to engage my DH in this foolish but fun dinner time ritual but he feels pancakes are dessert and therefore for after we’ve eaten our meal. My favourite is the very traditional lemon and sugar, but I do like nutella and banana too!

So here is my not-very-secret pancake recipe for you all to give it a try

125g plain flour

Pinch of salt


1 whole egg plus 1 egg yolk


225ml milk
 (not skimmed)

Small knob of butter

Topping of your choice

1. Whisk ingredients together until they are the consistency of double cream

2. Refridgerate for half an hour

3. Heat some butter in a frying pan, ladle in a small amount of batter and flip/turn/toss when it begins to set

4. Serve immediately. Makes about 6

    I'm seriously hoping Richard is going to make me pancakes tonight. Flipping is a man's job! Sugar and Lemon for me, and nothing else for tea, I'm totally with you there.

    I'm off on a business conference and they took us to an Indian place for curry. Good food but… I've been Thinking about pancakes all day!! My favourite topping is strawberry jam, banana slices and ice cream. YUM!

    I scoffed more than I intended and it was lemon and sugar all the way. I might see if I can persuade the DH to have pancake day once a week!
